Welcome back to Menu Monday! I took a little break for a bit to enjoy my sweet kiddos but I am back and ready to go! Menu Monday will be regularly every Monday. I always link up what we had the week prior because I have a tough time following my menu’s! Often I switch things up to use up something in the fridge or pantry. Sometimes we just crave pancakes for dinner, okay? But I LOVE seeing what you guys are making or have made. It gives me some yummy inspiration. This week was a little tricky. My boys were at their Dad’s for 2 weeks so we ate a lot of random stuff. But we are back on track now and ready to go! Join in!
Wednesday we had homemade spaghetti sauce with meatballs and homemade garlic cheese bread. It was YUM! I made all of these recipes out of this book:

Sorry these pictures aren’t the best! We had such a crazy week. This is our roasted thyme and rosemary chicken with veggies on the side. It tasted really great! I got it out of the picky palate cookbook.
We ate a ton out of our freezer this week and we had some taco meat to use up and a tomato that needed eaten asap! So this was our hodge podge mix of meals!
My husband said he was craving some peanut butter bars that his Mom used to make for him. He said they came out of a box. Then he teased me that I couldn’t make them because I usually only cook from scratch. I asked him to describe them to me and this is what I came up with. He was impressed! haha I followed this recipe HERE. I think he STILL thinks I made this recipe up. He has no idea that the google and I work together sometimes undercover. haha
